Simple & Easy Stuffed Peppers Recipe

**Some files on my camera didn't save** Keep in mind you can substitute each ingredient, whether you're vegetarian or vegan. Also you don't have to use white rice, I have used brown rice or you can even use quinoa. You can add olives to add extra flavor and avocado. You can actually cut the peppers in half and bake them instead of the whole pepper. This is super simple and lasts throughout the week. To start, wash your bell peppers. Cut open the center and clean out the inside of the peppers.

Then cook your ground turkey, which I seasoned with Adobo seasoning and later I added a small amount of garlic salt.

The white rice I'm using is latin styled, so while the ground turkey is cooking. I boiled a pot of water, added my rice and to that I put some olive oil as well as salt.

Once the ground turkey was fully cooked, I lowered the heat on the stove and added a can of tomato sauce with black beans. You can use any beans you like. Stir all of that into the meat, the sauce will absorb into the meat.

Then preheat your oven to 350 degrees. While that's heating up, fill each pepper. I added mozzarella cheese to the top of each pepper before I placed them in the oven. Take them out once the pepper is soft.
